Default How to read the A/F ratio on the dyno sheet?

When you get the A/F ratio on your dyno sheet, what should you be running. Also if you have a A/F gauge where do you want the little light to be at, all the way at the rich or all near towards the middle? I had a turbo civic and I never really payed attention to the gauge because I trusted the shop I went with to adjust the fuel at the right A/F, not this time, now that I have the Z I need to get knowledge on A/F so I don't go kaboom.
