If you have air pockets in the water hjacket, most likely excess coolant would be forced into your overflow and when cooling down the coolant will not be scked back into the water jacket.
My vote would be bubbles not a bad thermostat.

2) coolant was fine for the month after the blower/thermo install
about one week ago, i noticed my rad. sounding like a coffe percolator (sp?) after even the shortest of drives (low speed too)....
it had never churned like this before , either!!
i also felt extra heat when cleaning the wheels (a daily thing) and knew something was up..... it took a freak photo to get my attention to the coolant level, which had juped up almost 6" above the max delineation....
MY BIGEST thing is hoping i haven't damaged anything in/on/around the block...
if these samco hoses retain air, and are notorious for getting bubbles in them, im gonna go nutZ..... i waited a long time for em, and even settled for the wrong color , just to add to the protection on my blower motor setup...
talk about planning for disaster.....

You know what dude. On my spec V i had a Nismo radiator cap and all of a sudden the thing decided to hold 37 psi rather than the 1.3 bar it was supposed to. Of course keeping the already hot water in the block. That got me a warped head. Maybe Nismo cooling products=

my dealer is MOD FRIENDLY, and has installed ALL the upgrades on my car , to date.... (including the 287 pulley upgrade tomorrow!!)
