My 350z has to be kept outside at night and I was wondering if anyone knew of any kind of cover that fits the 350z that won't scratch it...

I use the Covercraft Noah car cover since I have no garage and the Z sits outside at night. I got mine with a security cable (as an added "screw you" to anyone that might try messing with it, I'm not totally sure how much security it adds, though I doubt it's much). The Noah has been pretty good, it does an extremely good job of keep moisture out/letting vapor out. I've taken the cover off of the car soaking wet on the outside and completely dry on the inside.

Problem with Naoh is that the fabric degrades after a while (2-3 years depending on usage), loses it's water repellency and will literally start to desintigrate, leaving nasty powdery stuff all over your car. It's also 3X bulkier than Weathershield to fold and stow in the hatch, weighs a ton when wet, takes longer to dry (once some of the repellency wears off)... I've gone through several of them with previous cars and will go with nothing but Weathershield from now on; it's 100 times better. My OEM Weathershield cover has been in use daily for two years now and is still like new.
