I ordered this online yesterday, and I was gonna get this installed but the people at pepboys said that the needle wouldn't read as accurate and that the needle might break. Should I just install it anyway or just change the bulb to a different color (cause the stock orange light looks cheap)

that's not something your gonna want to do on your own. a lot of risk. you gotta take apart and put back together perfectly and get the neddles in the exact position they were in the begin with. plus i'm pretty sure those will look worse than stock.
i guess my biggest question is...do the needles EVER get lit up? from their pictures, the needles look like the stock Z needles, but they look like they aren't lit at all. if this is just a different gauge face, then i think it kinda looks bad ***. The overspray thing you refer to isn't in any other picture, but i dunno that i'd buy it over ebay just for that reason.

Its not over spray. From looking at the details in the pic the white hash marks on the far outer edge are clear plastic. In the black section the hashes are orange/red including the numbers to show the red line. That plastic goes all the way up to the edge of the black (which is probably silk screened over the orange/red colored plastic). So, from the angle you are viewing, you are seeing through the clear plastic and seeing the orange plastic hiding beneath the black overlay. Besides, why would you have to paint the plastic? It wouldn't light up very well if you did that.

This is something that I took on doing myself in my old Honda to give it some spice. They actually had a set similar in style to this and I will tell you that after 3 sets of them not fitting I gave up and went back to the old "reverse" style gauges. This was a long time ago so maybe they have worked out manufacturing issues by now. This is a pain in the *** to do.
I am going to have to agree with the other members with recommending an LED swap. You could pay for it or take the time to complete the mod yourself. Even if you have to pay for it will be a better mod and last longer then the inverter that you will need to hook up to power the gauges in the link.
