Does anyone know what the factory fuel pressure regulator psi is set to?

I think stock fuel pressure is 48 PSI

Yeah they should. Fuel pressure within reason shouldn't be an issue at idle. If you set the proper fuel pressure and have some form of EMS to properly scale the injectors at idle you shouldn't have an issue.
