2.25" inlet/outlet are very small for an intercooler of that size. I'm not sure how the vortech piping works, but the core is just a little wider than mine, and the intercooler piping had to be trimmed for it to fit in there. Also, $95 for an ebay intercooler of that size is just ridiculously cheap. I hope it's made of real aluminum.

What size is the intercooler piping on the vortech kit?

The smaller one would be good for 550-600ish whp but those inlet/outlets are small. The larger one should be good for the 700-800whp but again those inlets/outlets suck. A good intercooler of that size will have 3" inlet/outlets. So both should be enough for your application. You'd probably get a bit more pressure loss over the intercooler which could be a pain on the supercharger setup as you'll have to up your pulley to make up for the lost boost.

With the larger you'd have to lose or cut your bumper brace. The 7.5" tall one should allow you to retain it.

The vortech intercooler is 24 x 3 x 7 with 2.25 inlet outlet as well. So I assumed that 7.5" tall one would work well. And yes it should also allow me to keep my bumper brace. In all honesty is that going to be a smart choice or am I better off going with a bell or spearco core? Also Im not too worried about pressure drop because once I get the fuel return Im going to be going with a smaller pulley anyway (2.62) since Im running the 2.87 right now on the revup.

Opps posting under my bros account. Anyway I also measured to make sure about the votech intercooler and the inlet/outlet are only 2" diameter from inside the pipe, and 2.5" from outside of it.
