Maybe just start with a set of high flow cats, it's probably the most restrictive part of the exhaust. We ran high flow cats with the stock exhaust and it was not much louder and still had pretty much the same exhaust note.

I have the Injen straight tip and its definitely louder then stock. The Nismo is quiet like stock. Good thing I didn't get the Nismo. Aftermarket exhaust should be louder.
Injen is quite a bit louder than stock, but you'll get used to it. I hardly notice it anymore, but my girlfriend always tells me my car is really loud lol...

The Nismo is louder than stock, the higher you rev, the more load you put on it, the louder it gets. It is much louder than stock at 6k at WOT, but almost always livable at highway cruse (Some with convertibles have complained about droning). It is not for revving free in a parking lot, it has little impact.

The Injen sounds great in parking lots, start the car or blip the throttle and it has a nice rumble. It starts building from there but seems to top out in sound around 3K, then by 6K it actually seems quieter. My wife always told me it was loud too.
