The 350z Headers are hard as fried sh*t to put on. How well do you know your mechanic? He probably got frustrated trying to tighten the last couple bolts and figured no one would notice if they were missing.

Definitely take it back to the shop that insalled it and make them fix it.

Is it hitting something or is it rasp? You likely got rasp for sure, which you also may not have heard at the shop.
