flex pipe... absorbs any shock your exhuast experiences... the header's and cats are not very shock absorbant at all and do not natrually flex.. if you bottom out, or hit a really hard dip in a road and the exhaust moves, you dont want to be cracking any header or worse...
the flex pipes are very important...
also... with no flex pipe, the exhaust connection's can and will become loose...

As for the support that would be the case if the entire system was only held in place by the muffler and the headers bolted to the engine, but there are hangers and brackets along the way.
I was under the impression the flex tubes were to deal with the torque twist from the engine and other chassis flexing.
That said, I have had my custom exhaust on my car for near on 20k miles with no issues. This exhaust does not have flex tubes.
Just my 2 pennies.

it can be.. the extra slight vibrations can cause the joints to get loose if they are not tightend properly...
the flex pipe can and will keep you from cracking a header if you hit a really big bump or bottom out... yes, the exhaust is supported by ruber bushings, but, as the exhaust flexes with that, it is also putting tension on your header...
