my car is at the dealership right now for this.
They called and asked if i wanted to get the injectors flushed, another $130 on top of the $460.
Anyone else do this? or am i just pissing money away?

I wouldn't. Especially only at 30k. There are a few brands of dump in the gas tank cleaners that acutally do work. If you want to clean them, consider that as a $10 or so alternative. Most of them don't do anything so do some research. As long as you don't buy crap qulity of gas you shouldn't need to do this at 30k. The only thing that will get flushed is your wallet!

From what I saw at my buddy who was a mech at honda, this maintenance was basically an in tank dump.

off the subject: JDMFairlady - that blue cat-like thing, i use to watch the cartoon when i was younger =) have not seen that picture in years.

350Zs are built like rocks. aside from the few minor TSBs and stuff, there are never any problems as long as you don't F/I your car.
Don't waste money on dealer "inspections" ... do what needs to be done, when it needs to be done.
My yearly maintenance would look like the following:
Change oil/filter every 4k miles (dino oil)
Flush / bleed brake fluid once a year (most dealerships don't do this even though it is very important)
Inspect brakes and rotors every 4-6 months
Flush coolant every 2 years
Change differential fluid every 30k miles or so, tranny fluid every 60k miles
Check exhaust for damage
That's about it...
Almost everything else the dealer does it total BS, "inspect seat belts" "check lights and horn"

Fill the car as SLOW as you can according to the service manual. When I did mine, I had to top it off twice during the week, but NO air bubbles or problems. One method is to get one of those screw on spouts and just poke a tiny hole in the safety seal with the tip of a toothpick and let it trickle into the fill hole on the car.

When you drain out of the radiator valve you will get maybe 40% of the coolant out at most (about 4 quarts). But it is so easy to do that you can just shut the valve back up, fill it and do it again the next day! After a few days you will have replaced most of it and that should be good enough. I wouldn't waste any more time on it than that.

Did anyone have any info about the radiator cap? I noticed some of those service lists say they replace the rad cap. Is this important... ive had my nismo cap for 40k+ miles... should i get a new one?

When the car is totally cold, just take it off and inspect it. I think it would be obvious if it needs replacing.
