I was thinking about carbon fiber mirror covers, but I'm still undecided on whether or not to do it. I like the way they look, I just haven't seen some that completely cover the mirrors, all the ones I have seen don't completely cover the mirror and it doesn't look right.

They really don't. I saw the car in person a few weeks ago, it looks sooooo much better in person.
