Default No low end torque/ hesitant sluggish acceleration at low speed

2006 Nissan 350z Touring Automatic

Bought the car as a shell, swapped in a newer DE engine, got it running but ever since then the car has had poor low end acceleration/torque. The engine revs up strong, the car just takes a long time to get moving. Once it's moving, it seems to drive pretty well, it's just in the low end/from stop that it's very apparent that it's not accelerating as it should. I've had codes for both upstream O2 sensors, front left ABS sensor, and the knock sensor/harness. I have replaced all O2 sensors, replaced the knock sensor and harness, replaced the ABS sensor ,swapped the clogged up cats for Berk resonated test pipes, installed a cat back, installed a JW Popcharger, cleaned the MAF sensor, swapped the spark plugs, topped off all fluids, replaced the throttle body with a Z1 75mm TB, replaced the valve covers(they were letting oil into the spark plugs)replaced intake and valve cover gaskets. Even after all of this and currently having no codes, this issue has persisted and I wanted some opinions on what the next steps should be. I currently have a differential from a manual 350z on the way to swap for my current diff as my current diff was giving me other issues but maybe it could also solve this one. Any ideas on what could be causing this? Figured I'd make a post as my last option before having a mechanic look at it.

Log the following parameters and post the csv, no better way to see what's going on with the car. Up-to which RPM is it sluggish? Did you replace the O2 sensors with OEM parts?

-MAF voltage
-TPS
-RPM
-Speed
-Intake temperature
-Ignition timing
-Cam positions
-Wideband sensors (sensor 1 on each bank)
-BFS
