How would it cause the oil pressure to drop? I'm asking in ref to a manual transmission car. An automatic would shut off, stopping the mechanical pump but a manual would keep spinning as long as the clutch is engaged.

That's a good thought and thinking it through, very possibly correct. But I still don't advise trying to simulate it, one might want to have full brake power and power steering would be nice if this is a high speed maneuver as was hinted at by the OP (higher rpms).
Also wouldn't be too good if one turned the key a bit too far... like to the position where you lock up the wheel.
And I'll ask again.... for what? Just to send some raw gas down the exhaust system.
