First of all: It's NOT called NOS...it's called Nitrous NOS is a company that makes nitrous kits...
to answer your questions:
1) Do it yourself, if you have basic electronic and some mechanical skill you can easily do it yourself
2) Since you're never supposed to spray longer than 20 seconds at a time nitrous is truly only for the drag strip so if you go to the track you'll have hella fun
3) I believe that NX (Nitrous Express) has the best kit for the EFI market, their horsepower values translate into RWHP not Cranck HP like the others and their customer service is absolutely outstanding. Second would be NOS, they've been around the longest and have a solid foundation. Zex is the easiest to install but I've heard mostly bad things from people that used it.
There are several others out there but I'd recomend you stick with NX.
Get the NX EFI Stage 1 Import
the NX Genx II upgrade kit
a NX TPS Switch and a Mallory Window Switch
or a NX Maximizer instead of the TPS and Window (it has those build in)
at least one step colder copper or irridium Spark Plugs
Do lots of reading on how nitrous works and the do's and don'ts and you'll have a great safe affordable power solution
