Where is a good place to get leather seat covers? Are there any shops in the bay that can do a really good install job? About how much is install?

no they actually make them to your exact needs for anywhere from 5 -650. check ebay. i just got some burt orange for 525. and had my previous two tone done for close to 700 but this was 6-7 months ago.
all leather craks with time.. i would think. mine is still in as great condition as new after 6 months but i decided to go with a more oem look with burnt orange and also selling my wheels for 06 wheels ect ect. heres a pic not too sure if they have perforated for the Z i would think they do

You could get them done in vinyl, they make some you cant tell if it's leather or not. alot more durable also. you can check www.yourautotrim.com and see the million choices of materials including leather. I know some of you will call bs to the leather statement but ask a upholster that has done it awhile and they'll tell you the same thing. Unless your buying from them and of course leather cause they can make alot more money on the materials. vinyl is easier to repair also, or if you have to replace just a bolster, or center you can.

one of the online companies has an install kit, but i've seen them installed, and it looked like a skilled/experienced person should do it (in my case, at least). as for install costs, mine was $100, but it was in tj.
If you have a steamer that would be a plus. you basically remove your covers. fold the new covers inside out and roll them on your seat like you would a condom. taking your hand and smacking down to make it tight. you would need hog ring and hog ring pliers to attach it to the frame. it's really not that hard. afterwards you'd use the steamer which will shrink it up a bit and take out wrinkles. if your getting some made i would use vinyl, leather is way way over rated.
