NA Utec, maf vs map, and weather

I've been thinking about the utec for a long time. But I'm still confused about the maf vs map sensors. If using the maf, the utec just spoofs the ecu by monkeying with the maf voltage, right? Or can one still control IPW by running off the maf? If it's just spoofing the stock ecu, which is the utec a better NA option than something like an SAFC? I understand the utec will also control timing, and requires no monkeying with wiring, but just for fuel management using the maf NA, why is it a better choise?
Also, how does weather affect the tune? Meaning, if I drive over to sharif in the middle of august, will I need a different map for the middle of december?

From what I understand, the UTEC, when in open loop fuel mode using MAF as input, has a background fuel map you cannot see. You adjust fuel by tinkering the MAF voltage the UTEC uses. This prevents the factory ECU from changing on you as it "learns" things, which would be a large advantage to the UTEC.
Another UTEC advantage would be the ability to directly enter timing, not timing adjustments. You enter, say, 25.7 in the table and the UTEC fires the plug at 25.5 degrees BTDC. This is as opposed to modifying factory spark and entering values such as +1.1 or -2.0, which could, again, impose the issue of the factory ECU changing on you, thus messing up your tune.
As for weather changes, the UTEC has a temperature compensation column you can fill out to add or subtract fuel and/or timing with temperature.
