Rim / Tire size help

I own a 03 enthusiast Z. It has the stock 17's with the bridgestone factory tires. I would like to change out those stock rims / tires with new ones but am very unfamiliar with size, offsets, ect. First off, I do not want to have to modify the vehicle, rolling fenders, changing springs/shocks ect. So my questions are these, what size rims should i be looking at? Should i stay with 17 inch or go with an 18 inch? I want to have the wells filled as much as possible without having any rubbing. Once I have determined the size of the rim what about offsets? From my understanding, that is the amount of distance from the center of the rim to the outer rim, if I am mistaken please correct me. I would imagine that would be different from rim to rim but again I want to understand how offsets work and what to look for. Would that have any bearing on the width of the wheel? I want to retain the staggered tire size from front to rear. Any suggestions would be greatly appreciated and thank you in advance for your time on this. Any examples of setups would also be greatly appreciated!
If I were you, I'd find a member of this forum with an '06 or an '07 who has upgraded his wheels and buy his stock 18s. The stock 350Z 18" wheel for those model years is a great looking wheel, and is all most folks need. They are 8.5" wide in back and 8" wide in front. I would then put 245/40/18 tires in front and 255/45/18 tires in back. They will look great and improve the handling of your "Z". Look in the For Sale section. They also should prove to be very reasonable in price.
