I feel your pain, there's actually a few nice shots of 18's and 19's set up in this thread that helped me decide to really go with the 18's. Im tired of running 19's and 18's looks really good with a good set of tires, and lighter for the twisties/track.

Stock suspension should not rub at all. As for any other factor you have to give more details about what you want.
1. Offset of wheel
2. Tire size: 275/35 would work but probably be stretched, may not need to roll fender depending on wheels offset. 285/35 may rub without a fender roll, this depends again on offset and even tire brand.
3. Amount of drop. Anything >1" and you'd need to probably roll or shave fenders.
