Default 30mm wheel spacer in the rear.

I currently have a 20mm spacer in the front and 25mm in the back. Im thinkin of putting the 25mm up front and putting a 30mm spacer in the back. I have stock 07 rims and i am NOT lowered. Would I need to roll the fenders?

why don't you just check and see if you have 5mm of extra clearance in the rear compared to now

30mm will be good, nice and flush.
I currently have 25mm in the rear, I could easily go another 5-10mm.

OEM 07 rears have an offset of 33. By adding a 30mm spacer, you're left with a mere 3mm. I say that you'll rub.

He will not rub . . . OP is not lowered -- 25mm spacers in front & 30mm in rear with OEM rims & tires will be almost perfectly flushed with the fenders.

Without being lowered you will not rub.

However, id at least suggest the springmount mod in the rear to eliminate some of that fender gap. Even then, I don't think you'll rub.
