rolling the fenders really depends on how low your car really is and also the type of tire since some run bigger/smaller than other brands.
why not roll them just to be safe?

first off, let me tell you what wheels and specs i am hopefully looking to get.
VarrsToen Es 2.2.2
F 19x9.5 +12
R 19x10.5 +12
Tires
F 245/35/19
R 275/35/19
Ok, so i just got back from discounttire and the guy was quoting me on some tires, and i was telling him the specs on the wheels i was hoping to get (above) and he swears up and down that the offset is "too aggressive" and, in the long run, it will cause suspension problems. but i tried telling him that i have seen over 50 cars with these wheels and exact offsets before. he is telling me i should stagger the offsets as well, and go
19x9.5 +22
19x10.5 +12
So im not sure what to do, because i have seen pictures and in-person 350z's with the wheels on it. but he says it will not work.
Basically i want everything 100% flush.
**I am lowered on Tanabe GF210's as well (1.0"/1.2")

what size tires are you running? i'm currently dropped on gf210 also and debating on getting 285's or 275's in the rear. so wanted to see what you were running since the drop is identical. thanks
