Default 18s or 19s? Wider or Not?

I have 19' Volk Gunmetal GT-7s. They are 8.5 in the front, and 9.5 in the back. I'm running 245/35/19, and 275/35/19 in the back.

I've noticed that my steering isn't as sharp as my roomate's stock G35 coupe 6MT. I've attributed this to the wider and larger wheels and tires in the front. What would have a bigger effect on increasing the sharpness and response of the steering.. going to 18 inch wheels with the stock width, eg, 245/18 in the front? or just sticking with the same width, but going down to an 18 rim?
