ride difference between track and touring models???
I went with the Track model simply for the cloth seats (Leather tends to crack & look cheap after a while - IMO) & the Brembro brake system. Before I bought my Z, I would always notice the nice brake setups on other cars and only wished I had the same. What ever you decide, I am sure you will be happy with it.

I have cloth seats in my winter jetta beater (2000) and the cloth seats are wearing and looking cheap... My leather seats in my 350Z (2003) still looks brand new, but of course, I take care of it by putting leather cleaner and protectent every week on the seats. I have my windows tinted to block out more sun and I also garage the car as much as possible.
I do regret not having the brembo option though.

Honestly, if you look at the cost of "building" a base model (installing an LSD, upgrading brakes, lightweight wheels) it would cost you far more than just buying a track model.
