Default what's that wire and circular plate in the stock sub location behind the driver's sea

as the title says... there's this circular plate that looks like it can be removed and there's a wire sticking out of it...

any ideas?

Planning on some installs there but don't want to damage anything

I'm venturing a guess that you are referring to the fuel pump and filter?

I would advise not removing this unless you have a hole in your floorboard you can put your feet though.

That's probably what it is... I was thinking of putting an amp over it (with a rack) but not sure if it was safe,

so the pump is not occessible from the outside then?

If you look inside the cubby toward the inside ceiling, you will see 2 L shaped brackets hanging down about 1 inch with pre tapped screw holes. It would be very easy to mount an amp aith a pivot against this so that you can lift the amp up when you need to but with it still being secured.
