North Cascade Highway(WA 20) is another and the most beautiful way to cross Washington, though it is only open late spring to fall.
If you're just looking for remote, lateral G forces in the Pac NW., Wind River Road(WA 30) from Carson on the Columbia River towards Mt. St. Helens. Didn't even have yellow lines in someplaces, but can make you dizzy.

Speaking of the PacCoast highway, I have rode it all the way from San Francisco to LA (screw the 405), but that was in a POS rental Escort (or something). Regardless, it was still amazing and I will never forget that trip.
Can't wait to make that trip in a Ferrari or the Z. This time I will go all the way from Vancouver to San Diego though.
