I think the actual towing would not be a problem. I would be more concerned trying to pull the ski out of the water on a slippery boat ramp with a RWD, wide tire, low ground clearance sports car. At best you are going to dip your exhaut tips and wheels into the (salt?) water, at worst you could end up with both toys in the water!

Technically speaking, you could do a lot worse than the Zed for towing.
Having said that, I'd be more woried about stopping than starting. I'm not sure what the laws are like in Au, but over here, if you were towing with the Z and something bad happened, you'd be at fault for the damage, especially if it's not advised by the manufacturer.
I had an S10 that I had loaded down WAY too much (~1000 - 1500lbs). The axles were sitting on the stops, and I can tell you that it took every bit of what the brake booster could provide just to stop, and forget about turning fast. The weight distribution was off so much I could understeer going about 25mph.
Whatever you do, be safe and take it slow. Make sure you keep an eye on your temps and I would strip out as much weight from the back as possible to make up for the weight of the tongue. I'd also try to get a trailer that has as light of a tongue weight as possible.

Sourcing a tow hitch and the weight you are talking about are no problem. I am currently building a light weight trailer to tow my quadracer. I have the weight balanced a perfect 50/50 so nearly no tongue weight. In your case, the launch ramp is the problem.. you will need to go in the water a good ways, I think I would convince your mate to get a double trailer. FWIW, my friend launched his jet ski with his srt20 swapped 240SX for 2 seasons without a problem. Up to you, I have seen much less a car tow more...

I don't see any issue with it. It doesn't make sense to spend a few thousand on a beater truck (deal with all the maintanence issues), insure it for a thousand a year, if you only plan to tow a light load a few times per year (and its safe).
Id rather invest the coin for the next car...or another toy to tow.
