1. C5 ASP-prepped Corvette Z06. Most amazing car I have ever driven! Suspension was softer than expected, but this one got almost all of its power to the ground with ease. It changed direction like a cartoon, and the brakes felt like they could stop time itself.
2. C6 (08') SS-prepped Corvette Z06. Great power, and good handling. It probably would have been a little better W/O the electronic nanny. The owner put it in "competitive" driving mode, but I thought it was still a little too intrusive. Oh, and I the sound of that thing was/is perfect. If I close my eyes, I can still hear it.
3. APS TT Extreme SM2 prepped 350Z. Wow. Just wow. The power delivery was silky smooth and, no matter what RPM, always more than the (racing)tires could handle if you weren't careful. The JIC coilovers did a great job and the car's reflexes were razor-sharp.
4. STU prepped 350Z. This is my Z and it's just about where I want it. RS-R springs, hotchkis sways, SSR 16lb wheels, 615's, and a Quaife differential all add up to good balance and quick steering. The HPS brake pads have crappy bite but the car still stops as well as with stock pads. It just takes a little more leg-effort. The 615's are good for street tires, but I still miss my MX's. as soft-in-the-sidewall as they were, they gave more grip (when hot) than the 615's and just got better and better with heat.
5. STU prepped STi. This is my brother's car. He's running KW coilovers and RE-01 tires have combined to make his car feel a little lighter than my Z. (That thing was slow to change direction with the stock suspension, but no longer) You have to bring it into corners just a hair slower than my Z, but you can also get into the throttle a lot sooner and harder on the way out.
6. C6 Corvette (Stock) Good car, but it wouldn't "talk" to me. I always felt like it could do more but I couldn't get a feel for how much more.
6a. Bone stock 07 350Z. Similar to my Z with a little less traction and a little more body roll. Also a little more power. Its biggest advantage on course over my Z was the ability to stay in gears longer and use the extra power at the top of the taller tach..
7. Bone stock Magnum SRT-8. That thing had great power and very good handling (for a car of this size.)
7a. Bone stock RX-8. I was able to stay at the top of the tach and never had a problem with a lack of low end grunt. Suspension was softer than expected but also very forgiving. It changed direction better than a stock Z.
7b. Mustang, Shelby GT package. Another big car that surprised me. Good power and good handling. 2nd gear seemed taller than my Z and it had enough torque to use all of it. (even near the bottom)
7c. Vortech SC SM2-prepped 350Z. Great power but poor delivery. It felt stock until I got near the middle of the tach. Then it felt like I was being attacked by 100-150 angry horses. Difficult to feed throttle out of turns. The Nismo suspension felt like a better version of my stock suspension. A little quicker and a little sharper.
^^

A few of my favorites from recent memory. (#4 is my Z) and all those listed above were on a track.

These were not on a track, but still fun.

8. 240Z. I wish my dad still had this rust-bucket. Great handling car. Very easy to control.
9. Z32 300ZX TT. Great power. Good handling.
10. Z32 300ZX N/A. Decent power. good handling
11. 89' Trans Am "Formula". Loads of power, good handling.
12. 94' Trans am. Good power. not so good handling.
13. 78' Corvette. This one is not stock. Decent power, good handling.
14. 05' C6 Convertible Corvette. Same as the other C6 above.

I know I'm leaving some good ones out...
Update:

(To the on-a-track list)

Acura NSX . Great handling, but the few runs I made in it were not enough for me to learn how to keep the engine in its (very narrow) power band.

Honda S2000. Stock (newer one with the extra torque) Awesome handling , still has a lack of torque down low but it's tolerable. The car dances as well as any I have driven. Less weight=more fun.

Honda Civic Si (older hatch-type) with a, get this.... RSX motor swap and many other suspension mods. Decent power, great handling. Again, less weight=more fun. (Now I understand why so many people buy old CRX's and race them.)

Enough.

And who said that we only went in parking lots? Some of our locations were blocks away. Of course like you said you dont get a good feeling for the car, but still got to drive it.

I found out that a Scion Tc 5 speed actually throws me back into the seat more than a 6speed 350Z. And it was done in a parking lot

But basically not much, other than turning radius and ergonomics

My cousin just bought a '04 mint condition F360 Ferrari Modena w/Tubi exhaust, factory special all leather interior, & a lot more stuff.....I drove it too!!!!
It was cooool....sitting behind the wheel seeing the view of the sloped fenders sort of reminded me of the '69 Vette I use to have years ago.

sl55 amg - most amazing sound ive ever heard. supercharged v8 for teh win.
dads 83 911sc euro- (non-stock) no ac/cams/port/polish/bb exhaust/headers/intake/ 964 oil pump/ corbeau seats / car weights 2700 incl full tank and fat *** driver (me (330lbs)) with 212hp at teh wheels. revs like a motorcycle. (was before ac delete of 70lbs). Autoxing is a blast since with a flex of the foot one can control the rotation of this vehicle.
c5 frc- was just an amazing ride.
87 944S-> i miss you baby. best fun one can have in highschool is doing donuts in the school parking lot when everyone else either has a truck or fwd...
05 gto-> power and comfort and space for ya mates.
07 350z-> test drove a base and got it sideways at teh first corner. Fun in a handbasket, reminds me of the ol 944 so much ive been dreaming of one since i drove it.
Uncles Zr1-> no not the current one a 1991. went like stank. floored it in South Africa on an on-ramp and were doing 180k's an hour before we go onto the highway. (thats around 120mph i think).

waiting on dads 545i to arrive so i can drive that too.
i currently drive a mazda 3 and though i love tossing it into corners, im just sick and tired of fwd and cramped space for the driver. Surprisingly i fit better in the Z than the 3.

Middle class latino...The Zed's the best thing I've owned...Oh!, what I've driven? '91 'vette (belonged to my sister's b'friend). Actually, only in the horse- power department did it impress me; ergonomics were/are not quite as good as the Zed's! All in all, I'll stick to Japs. I also drove--once--a CLK Benz, bUT the power motor seat was frozen shut, so it wouldn't be fair to evaluate that beast with that handicap; it did feel v-e-r-y powerful!
