You pretty much mentioned them in your post (as far as the 'luxury" differences.) The Track of course comes with the aero package (the little spoiler "wing" on the back and the front) and the 18" light weight Rays wheels. Also the Track comes with Brembro brakes and the Touring doesn't. These are all performance upgrades and not really luxury.

You really can't change the way Nissan has these set up as far as preordering but what most Track buyers (the ones that feel like you do) are doing is putting on aftermarket leather seats and an upgraded stero when they get the car. To upgrade a Touring by putting on the Brembro brakes and the 18" Rays would be pretty expensive however.

If you want the "luxury" items from the Touring package, and the look of the Track, you can order the Touring and add the aerodynamics kit to it as an option. This would be close to the track model, except you wouldn't have the biggest features of the Track model: the lightweight Rays wheels and Brembos.

I was faced with the same decision, Track or Touring, and I decided the leather and 240 watt Bose were more important to me than upgraded wheels/brakes. (No flames, people -- my rationale was that the stock 18" wheels look good and I have confidence the stock brakes will be great.)
