When the weather's crappy, I leave it on. When it's nice out, I shut it off. My shifts are a thousand times better without the VDC. I hate the bloody thing, to be honest, but when you're going up a wet hill or around a corner with a giant puddle in it, you just can't do better.

I've yet to turn mine off... guess I'm a chicken but its seems to kick in at the appropriate time/level. If I take a turn quickly and mash the gas I can just feel a little wiggle and SLIP! appears on the dash as I counter steer.
I owned a Mustang before and did a 360 in the rain... its really not fun when you see headlights from other cars flashing thru ALL your windows like a strobe light. That car wound up in someone's driveway as I just missed crashing into all sorts of large, heavy, hard objects (trees, signs, other cars). So I am a bit gun-shy about powerful RWD cars in the rain ever since
To that point when I drove my Z home from the dealership it was raining (and at night no less!) then as turned down off the interstate I missed a shift, going from from 5th to 2nd instead of 4th - YIKES that spun the tires instantly! Thankfully the TCS saved my *** or I would have wrecked the car on day ONE of ownership
So yeah "better safe then sorry" seems like a good choice. However one of these days when the rear tires are toast I'll find a nice empty parking lot and play. Even the wife asked when she could give a smokey burn-out a try

^^ If you take your Z to an autocross or some other event where you can safely push the limits, you will find the electronic nannies generally jump in to save you too soon on dry pavement.
That being said, if you are not looking to push the limits, I see no reason to turn the nannies off.

As a matter of preference, I always turn it off as soon as I turn the car on. I don't know why, but I figure the last thing I want to do if I have to take evasive action is to look for the button to push.
