I have an 80 pound part German Shepherd mutt. I drove him in my roadster one time for a 5 mile trip. Never again.

Haha you need to put down seat covers or something. But some dogs are too antsy to take in a car without back seats. My dog is very calm and mellow just sits there so I'm fortunate I dont have to sell the car.

I've been taking her in the Z and just driving really carefully but Im still very paranoid about the airbag.
I googled pictures of the Z's airbag deployed and it's right in her face. She'll get severely injured or die if it explodes and even a 20 mph tap would do it.

So, my plan is to remove the passenger seat and just put a small platform similar to the one I built in my original thread that'll go over the seat studs so they dont poke her. That way when she's laying down or sitting, even when the airbag deploys it will deploy above her head and won't touch her. Hopefully..

Also once my brother goes back to law school he's leaving his car here so I can use that

I also recently had this problem and I was able to solve it using the method described below:
Install a harness for dog sledding Ideal for dogs with good behavior, the harness protects your dog and one position with a harness that slides into the harness. Make sure your dog doesn't chew on the harness in the middle of the ride. Also don't forget to check out the 7 Best Dog Cooling Pads and Mats in 2020 to make the process easier. It helped me a lot.
