Unhappy Overheating 2004 nissan 350z

My z recently started overheating so we changed out a bunch of stuff. New thermostat, new water pump, new temperature sensor, new radiator cap and it still was overheating. We eventually thought something could be clogged up so we ran water through the hoses and they seem to be running water throughout the system just fine. Eventually, we got some advice from a buddy to take off the thermostat and see if it still overheats. we removed the thermostat and drove it around for a while and now there is no overheating, other times it would overheat almost instantly driving down the street. Could this be a sign of bad cylinder heads? if not what else could it be. in desperate need of help here. Please let me know any suggestions thanks!

yep currently it only has water in it but we did bleed it, even changed out the oil completely.
