Default 350z overheating

2004 Nissan 350z, 3.5L V6. Overheating, replaced thermostat, all hoses, still overheating, when sitting at a stoplight and the needle starts to climb, if I put it in neutral and give gas the needle goes down to normal...? Ideas on this?

Removed fan, and radiator. Checking both. Going to try to direct wire fans to see if they work. Trying to do everything I can before messing with the water pump. I can fix all including that, but will probably have a garage do the pump

Heat working, a/c works, water pump working. Only overheating when stopped in traffic for several minutes. Driving is fine, short or long term.

Did you do a complete and proper bleed on the system after you removed all of those components? The cooling system on the Z is a ***** to get all of the air out of. I will see if I can find the procedures for it for you.
