its VERY simple, the engine revs up and you shift. you can shift(up or down) whenever you want depending on your current driving mood. I just don't understand how something so simple can confuse someone.

wow... this is full with fail. Take a driving class dude. No offense that you're new, but you're asking dumbest questions several times. Take a class so you can understand what gears are even for in a car and how they work, at least you won't get flamed for having no idea how the car that you drive operates lol.

5th gear on the 5AT is not an overdrive gear. We don't have an overdrive in our cars. Furthermore, the shift delay is nowhere near as long as you make it seem. I know the 5AT was revised in 2005.5, so maybe older Zs are slower, but my 06 responds almost immediately during a shift. Besides, the actual shift happens very quick, it's just the electrical delay that some have mentioned on their older Zs, and I'd attribute that possibly to grounds (people swear up and down the car shifts much quicker with a ground kit). I almost never bounce off the redline. And in 3rd gear, to climb 500RPMs toward redline is a pretty good amount to climb and takes a few seconds - so shifting as early as you say is pointless.
If you wanted to shift at redline in 3rd gear I'd probably give the car 100-200RPMs before the shift (if even). Only in 1st gear would I recommend shifting a bit early to make up for any electrical delay. Also, there is no jerk in the revised 5ATs, as they rev-match on every downshift. And redline is actually 6650 on VQ35DEs.

if you want speed, gears 2-4 is your choice. 5th gear is overdrive and for gas efficiency and fuel economy. How old are you btw?

Suddenly, a ricer honda/civic/Scion was next to you and want to race. What you want to do before the race is switch to M mode, it will automatically downshift to 4th gear, you normally can race in 4th but for even more speed, press down on the stick so it would downshift 3rd then floor the gas. When the tachometer's needle reach 6000rpm, press up to up-shift to 4th and same for 5th. Redline is 6500rpm but there is a slightly delay in automatic so do it shifting before that will actually shift the tranny at 6500rpm.
You can also downshift manually to save your brake pads and make it last longer by tap on the shifter. You will feel the car slowing down without pressing the brake pad. Dont go from 2nd -> 1st at high speed or you will feel the jerk. Only downshift from 5 -> 4 -> 3 -> 2

you are wrong. Most car manufactured nowadays will have overdrive gear, which is the highest gear available. Only car that doesn't have overdrive are one that manufactured before 1980 [Source].
Look at the gear ratio for both 6mt and 5at in the attached pic. 5th gear and 6th gear are always the overdrive gear. It's there to save gas by operate the engine at low rpm and for cruising on highway/street, anywhere when speed is above 30mph. This is why the MPG for any auto is less than a manual. Example, in the Z, mpg for highway in 5AT is around 20mpg and 6MT is 25mpg. That is because at 80mph, engine is operate at 3000rpm in 5AT. in 6MT, engine is operate around 2700-2800rpm. Less rpm save gas.

I agree, i dont know what you guys are all tripping out on, the manumatic has built in fail safes to prevent it from being damaged, and the engine has a rev limiter. The only way you can damage your car by downshifting or not knowing when to shift is by losing control and crashing.

You have a valid point, but allow me to clarify: the 5th gear in the 5AT isn't a typical overdrive gear. My car accelerates very briskly in 5th gear, where as in other cars, the transmission has a tendency to lock and not allow you to accelerate until you turn OD off (going/sticking to 3rd gear, usually), or just pushing the throttle more until the car downshifts. My Maxima had a 4-speed with OD, and simply put, the 350Z's 5AT is absolutely nothing like that. In the Maxima, there was no such thing as brisk acceleration in 4th gear - that was purely an OD gear - you had get the car into 3rd to do that.
