Would two 10" W6's be overkill?

My opinion is two.....If you go with one you may over-adjust to meet your listening preference. If you go with two you can keep it tight (30-40hz) and still have the volume. Just my experience.......

Do you think a 500/1 amp would be sufficient for two? Since I would have them adjusted low, I would imagine that would be enough power. Then if I still wasn't satisfied with the bass, all I would have to do would be replace the amp. Does that sound like a reasonable compromise to everyone, or would that just not be enough power for those subs?

why are you still thinking about 2 10w6's when we already told you 1 FI Q will sound better?

if you want JL than do it , power it or them to full rms and the 500-1 will do that for 1 but not both
if you are not gonna take my advise from real world experience and not theory than so be it
your will spend way less money on an custom built FI sub and it will cost less, get louder, get deeper , sound better
the JL will sound good the FI better

But that is one of many you could choose from. I don't know how much power the Fi takes, but IMO, get one with as much power as you can afford (500+ watts).

+1 on getting a LOT of different opinions on amps.
If it were me, I would go for a Crossfire VR1000D - 1000 rms into 1ohm. get a dual 2ohm voice coil sub and wire in parallel to 1ohm.

FI SSD 10"= 800rms
FI Q 10"= 1000rms

I have 2 JLW6V2 10" in a ported box. They have plenty of bass for when I need it. And I have about 250rms each. As far as a amp goes I wouldent get a jl unless your getting it for show. You can get double the power or even tripple the power than a jl 500/1 for half the price. For $300.00 you can get a poweracoustik a2400bd. Does close to rated power and great price.
