Default Drive with the center console out

I am sure this is a dumb question but its ok to drive with the center console removed and the oil pressure, battery, and multi gauge disconnected?

I drove mine with my center console out for about a week. Just to be on the safe side I did plug my guages back in and let them hang there.

Drove without mine for a while, about 2 weeks. No problems. The second time was for about a week.

yes, it's fine, but make sure the air conditioning 'white' box is not disconnected, or else your air conditioning will be full blast (also possible CES light)
