When I first placed the OMP gas pedal plate on, I had that same problem heel-toeing that you described, but by installing the brake pedal plate, it remedied the situation. Unfortunately, you've already installed the brake pedal plate. I don't know how you could get the brake pedal so low, especially since your freshly bled brake lines should be absent of any air.

Perhaps the best bet is to get a thinner plate for the gas pedal. It seems that the OMP plate are rather thick (1/4" IIRC). Some of other plates I've seen online plates look a lot thiner.

I believe I posted the same problem in the intial thread. It turns out that my speedbleeders were causing my brake pedal to have more travel. I pulled them out and put my stock bleeder screws back in and now my brake pedal is right in line with the gas under hard braking. The high friction pads I run helped too since it takes less pedal pressure to slow the car.
Since I have driven a few different Z's and not had a problem, I would say your problem lies somewhere within your brake system. Perhaps that's just how the AP's work. The few Z's I've driven on track had fairly even brake and throttle pedals (both brembo and non-brembo)
