We do have couple of board members with TomMotor sport coilover springs and Tokico D-specs, that would get you decent linear spring rates and adjustable shocks (compression AND rebound).

Ad has expired but you get the idea.
Here is how your choices stack up against one another.
Unless you make a diffferent product choice, your other choices won't measure up to the S-tune setup, Koni valving will be better but spring rates aren't as aggressive.
Eibach 350Z progressive springs 1”/1” drop
Spring rates in LBS initial/final front 296/384 initial/final rear 316/421
Hotchkis 350Z Linear springs .6”/.8”
Spring rates in lbs 340/330
Nismo S-tune (twin tube construction, uses progressive springs)
350Z .8"/.8" drop
Spring rates 448/504
