Just remember to let them sit on the car for about a week before you get an alignment.
Also remember it takes a few weeks for the springs to fully "settle" , meaning you'll get a lower drop then what you see when you first get them installed.
Be sure to take and post some before and after pics

Now i just order my springs and they will be here tomorrow... I am getting the eibach pro kit which lowers the car 1.0 all the way around... I'm wanting to know if i'm going to need chamber kits or what... can anyone tell me what i might need so i don't screw my tires up

Hmmm...looking at that blue Z makes me wonder about my springs. I have the GF-210's on 19" Volks, my car does not look that low. For some reason it always looks higher than most other lowered Z's. Im gonna find a good side pic and you guys can tell me if Im crazy or what.

Tanabe GF210 Series 350Z progressive springs 1”/1.2”
Spring rates in LBS 336/375
Oem 03/04 314/342
Oem 03.5+ 314/427
Nismo S-tune (twin tube construction, uses progressive springs)
350Z .8"/.8" drop
Spring rates 448/504
Going with GF210's will be a significant step backwards away from the performance you say your after. As you say, they are soft especially in comparision to your S-tune setup.
For a simular drop your your performance goal is better served by linear Tokico D-spec springs with a 1" drop
Tokico D-spec linear springs 1" drop
Spring rates 375/375.
Better yet would be TomMotorsport sleave coilovers
Spring rates 450/350
Spring rates in LBS 336/375

And a few other companies offer simlular products that could make the same claim about being the best, but wisely choose not to.

Tein S-tech slightly progressive front/linear rear .7"/.6"

Whiteline linear springs .8"/1' (Whiteline lists a varied drop spec)
Spring rates in LBS 365/445
Dont get me wrong, you made a good choice. And IMO their are other choices that would have been far worse.
