I'm buying one
Alright I admit it I don't own a 350Z. I am going to look at them tomorrow to buy one, though and I want you guys' opinions on which would be the best model to buy.

Although I can honestly say that not one person has ever asked me what type of Z I own (which model), and I've never felt that I've needed anything beyond what the car has, I probably wouldn't get the base again. Overall, most of the models are not all that different and the car is bascially the same, but there's a few things here and there that most would say is worth it that the other models have. The touring has more features on top of the other that people seem to like.

Some standard are only available on certain models, some options only available on certain models, so I'd take a look at the chart(s) and decide what things are important to you.
For example, the Brembo brakes come standard on the Track. The 5sp automatic is an option with only the Enthusiast and the Touring (n/a for other models). Nav system only an option with some models, leather standard on the touring, cruise control standard on all models except base, etc.

Very happy w/my touring. I think the touring gets a bad rap, but every dealer I've been to says it's the easiest sell. Personally I like having heated power leather seats and in-dash 6cd. It wasn't much more than a performance, but feels like a lot more car. If I was going to track my car though, i'd have bought an enthusiast and purchased my own wheels and brakes.

base...cheapest.... who cares about vdc ...tcs...or hids.. even though i have aftermarket...i feel the base is the best platform to start modding... but any would be a good choice.. a Z IS A Z...SAME ENGINE SAME BODY
I got the touring model because the little things make the car that much more cooler. The leather seats give it a luxury feel (even though you bake here in Vegas). The upgraded system is a tiny bit better than stock, but I would still recommend you swap them out. But I agree with some other members... A Z is a Z, and I'm sure you'll love whatever model you get.
It's all about what you want out of the car. I definitely wanted the Brembos, so it was a Track for me. As far as a platform for modding, though, I think the Enthusiast offers the most bang for the buck. Aside from the HID's, the other thing the Enthusiast offers is the LSD, which does not come on the base model.
