Default A/C delete and fan behavior

The short version: My fans don't come on until the coolant is 208 degrees. Is this right?

The long version: I just got a 08 and am new to the Z. I had only driven the car 3 miles before it became obvious that its oil galley gaskets had failed so I went in and replaced those. Since the car will be used only on the track, I removed the a/c compressor and condenser while I was in there. Now that everything is back together, I am wondering if the cooling fans are working correctly. The self-diagnostic turns on both fans (low and high speed), so I know they function and the car can control them. The internet tells me that fans should work like this.

Start the car with a/c off = No fans
Start the car with a/c on = Passenger side fan on
Car running at idle and up to operating temps (190 something) = Passenger fan will cycle on and off to cool
Car running at idle and exceeding operating temps (Around 208) = Drivers side will turn on to assist the other fan
Anytime the a/c is turned on the passenger side fan will come on for the a/c condenser.

The a/c switch does nothing, but I am willing to chalk that up to me removing the compressor and condenser. Still though, shouldn't the fans come on before 208 degrees? I've swapped around the relays and it didn't change the behavior.

I'm inclined to agree. The Tstat opens at 195F, I'd imagine that's when fans come on. Should be easy to search.
