What purpose would this serve? Protect the exhaust from a rock going through it?

Highly unlikely... and very ugly.

Yeah, I've seen that on the discovery channel and I saw it a month or so ago driving up to Park Rapids, Minnesota. But about that little carbon fiber piece, I wouldn't personally do it but it is your car so if you like it no need to ask us, it's your car and your paying for it.
