The insurane company doesnt need or want to know that its an aftermarket bumper. Hell the OEM parts are over priced so they are worth mroe then what you currently have installed Im sure. If it happened to me I would say my, lets say, front bumper is cracked. An OEM bumper is what....over $1k to replace and another $500 or so to paint...Keep it simple.

If there is no other damage behind it.....trust me i'm in the process right now!
i banged my fender, tore the bumper off, popped the washer fluid tank, and the plastic supports for the bumper...$1600.00...still sucks tho!

^ Actually, the insurance authorized repair shops might.
Im pretty sure the insurance company pays out the amount their adjuster sets, no matter if the shop goes under the budget. The adjuster will specifically state whether "OEM" or "Like-OEM" parts are to be used. Most Insurance companies will set price to that of OEM parts, but state that "Like-OEM" parts may be used.
In these instances, the shop will almost always opt for a refurbished or aftermarket bumper since it is cheaper. They will then pocket the difference in the adjuster's amount and the actual cost of the shop.
Keep in mind that many Maacos are an authorized insurance repair shops, and Maaco's, athough independently owned and operated, commonly use refurbished bumpers or even in some cases try to "heat-treat" your damaged bumper back into shape, then repaint.
