Do cams increase risk?
I'm thinking about adding some cams, most likely the JWT for turbos version. I believe its the N2 model, as opposed to the N1 for NA engines. Anyway, I know they can add some power, but do they also increase the risk of detonation? I have stock internals and the APS ST...

As long as the tuning is good, you'll be ok. There are many people out there with JWT or Nismo cams with turbo's etc... and they are running well. Just have to make sure it's tuned well, they are more aggressive, so it may take a little work to get it perfect when tuning depending on your setup
Cams do not increase the risk of detonation. The engine should, of course, be retuned to maximize the benifits of the cam shafts. Cams often reduce the likelyhood of detonation, due to the decreased thermal load on the motor (less restrictive intake and exhuast through the motor).
