Fuel pressure gauge is usually in-line under the hood, at least mine is. Most common answer will be either exhaust gas temp or possibly dual wide bands. It pretty much whatever your tuner prefers. If you are just trying to fill a hole in the pod you can always get another engine temp gauge, one that is more accurate than the stock unit.

I have wideband and boost (aem tru boost so its a gauge and controller).
Swapping out the AEM tru boost for the Pro-EFI CAN gauge which is a super-duper multi-function gizmo.

you will want something to monitor boost for sure, preferably warning you if you are overboosting. EGT is good, oil temp is good and so is a digital wideband. You can eliminate a boost gauge by putting in a HKS EVC6 which will give you a digital readout (mount in cubby). A HKS turbo timer will give you voltage (mount in cubby), then you can replace that pod.
Four Defi gauges plus a wideband is about 12-$1500
Three Defi's, EVC6, and a wideband is about $14-1800
turbo timer is about $150
Remember, it isn't really possible to monitor 6 gauges at one time without concentrating on the road. I don't look at my gauges while driving hard unless they flash (luckily they havn't yet)

Ummmm no you don't.... The CAMP2 on its own will monitor and display (w/ warning option) all of the common parameters through the OBD2 port. W/ some added parts, you can monitor other things like boost, and EGT. A/F i don't believe is quite that easy. For that you will still need a wideband controller, and i'm not sure if the knock monitor will give an output signal to the camp, or if it has to go through an FCON to work.

IMO your best bet is to have an EMS that is monitoring everything (through the help of addition sensors if needed), that automatically adjusts/fixes/retards/cuts/lowers/backs off/etc, if something gets outside of a parameter (i.e. fuel pressure drop, oil pressure jump or drop, a/f too lean/rich, boost spike, etc..). If you are expecting to be able to drive, monitor gauges, adjust driving to what 6 gauges are telling you, it ain't gonna happen...thats when things go boom

I got the Zeitronix because it had a bit of info on one read out and didn't have to clutter the cab with gauges. I have a dual gauge pod that reads oil pressure and will have a fuel pressure gauge soon. I can't ever monitor all that stuff at once when driving, I usually just hit the peak button to see what the hi/lo paramters were after a run.
