In dead stop traffic along with the summer heat the highest temp I see is 85c when I have my GTM fans on... even with spirited driving and no fans it doesn't go over 90c ever unless im dead stoped and dont turn my fans on for awhile.

Checking the coolant doesn't really mean there aren't air pockets, the smallest air pocket will make a difference.
Are you bleeding the system from the factory bleed "T" on the rear passenger side of the engine? That is the highest point of the cooling system and where the air pockets would collect.

I just dont feel comfortable with the way the temperature starts going up instantly when I turn the A/C on!!! No A/C in 100 plus is a killer too!! Yesterday I took it for a cruise and did not run the A/C at all, and the temps hit a peak of 203. After parking the car in the garage everything looked good, coolant getting dumped in the reservoir and after cooling it got pulled back in. Though, I notice that the was block was making some weird noises. It sounded like it was freaking breathing!!! Normal with a sleeved block? Hopefully nothing to worry about. This morning I checked all the levels and everything is looked great.....

sounds good man...hit me up when ever you like...(knock on wood) this setup has over 10,000 miles on it with not one problem. keep in mind guys if you have a sleeved block you must!!! have all the supporting cooling mods. I run the big koyo radiator, pathfinder cooling mod, nismo thermostat, GTM fan shroud with dual spal 14" fans and a setrab oil cooler. This combination keeps the temps constantly in check.
