Personally I wouldnt but If ur not turboed or SCed (which gets in the way) theres not that much to it. First depressurize ur system, Then loosen the main belt to get it out of the way. Loosen the AC belt--remove it and remove the tentioner components.
Four bolts hold the compressor in place, lower it and remove the hoses. Mite as well take the condenser out after u remove the hoses from IT. Secure ur AC clutch wire so it doest get trashed. I would pack it with electric connecter grease and tape it up tite so it doesnt get messed up.
Any open ports/lines will have to be sealed (condensor,Compressor, lines to evaperator) air tite.
When u put it back together u will have to flush the system --Prob replace the expansion valve and def have to replace the drier. What ur going to gain --I dont know.

Thanks for the tip. I am not looking to gain anything from taking it out except a slight weight reduction. My Z needs to be put on a diet.

Dude,

Do not remove your AC. You may save 30 lbs on a 3200 lbs car. You would be better off going on a diet. You will wish that you had AC when you are stuck in Chicago's rush hour traffic on a 90 degree day. Removing AC is a ricer mod for sure because you gain absolutely nothing and you make your car uncomfortable.

the AC system will weigh more than 50 pounds, but why stop there, i would remove all the bumper reinforcements, the airbags, the power steering, and all the plastic in the car....

There was an article in some tuner mag about weight reduction on the Z. I think they got the weight down to about 2700-2800 lbs. They replace the hatch and doors with carbon fiber. They remove alot of plastic interior pieces. They took out the sound deafening material and removed alot of wiring. It was a cool article but it no way I would every strip my Z like that.

Right now i have a ported box and amp, and the touring package with the power heated seats, 19 inch wheels, and a urethene lip kit. I feel the car is a little heavy. I havent had an ac all summer and no complaints. If its 90+ il'l usually refrain from driving seeing as how the evenings are usually nice and cool anyways. I dont feel like im at 3200 lbs, probably more like 3600-3700. As for all the other goodies i could remove, i think im going to swap the seats, and remove the sub and amp. Lightweight wheels are always an option, but we'll see if i can make do with what i have now..

lightweight wheels... is the first place to go with this pursuit of weightloss. That's the first place you will feel a difference...

I believe I've seen some titanium coilovers, that would save you quite a bit.

Remove front strut bar if you don't need it, or replace with a CF strut bar. Also remove F/R anti-roll bars if you don't need them, or replace with lighter hollow ones.

Rear window wiper, saves a few lbs. Lightweight battery. Spare tire and tools...

Lots of things you can do without stripping your car down to the bare bones.

Also if you never have passengers, get rid of the passenger seat obviously. You could even get rid of passenger airbags.

Get a full Titanium exhaust, like the JIC single exit full Ti... alberto has one I think? Lots of weight saved there. SS headers should be lighter than the cast exhaust manifold.

Aluminum lugnuts...

Kinetix plenum, which is made of some kind of fiber/plastic/glass/weird composite. The stock plenum weighs a ton.

That should get you started...

you dont need AC to defog the windows. You can just keep the fan and run that. Heat is always on anyway.

The AC unit does also create parasitic drag on the motor, but I'm with the guys above. Removing it will not create a noticable difference in accelaration or speed. You're better off ditching the subs and replacing the wheels for the weight savings. In fact, all unsprung weight reductions will create a much more noticable effect.
