update:
today we got the new traction arm and traction link from nissan. went over and put them on. everything is going alright. we notice the axle boot has slipped off. and we spent an hour trying to get it to cooperate and slip on. but it won't. something else is definitely messed up. so we say fu*k it and take it to the nissan dealership to drop it off. we're taking it off the rollback and i try to start it up and the wheel, will NOT turn all the way right. FML. maybe the front axle bent? were going to see what nissan says and i will post again tomorrow. im scared to find out. because the steering was definitely fu*cked up.
1) any reason the axle boot wouldnt slip on easy? is there a trick to doing it?
2) what could be causing the "insanely hard" steering?

I'd say it's pretty evident something is screwed up with your front end. I'm sure the dealership will figure it out for you, but I'l be surprised if it's not fairly expensive.

A hit like that could have broken or bent something in the steering gear (rack and pinion assembly). I'd expect it's the rack itself, since the damage is on the end where the teeth are cut into the rack.
I'd noticed in the video that the band had come off the boot, but the boot looks like it's still in the right place. That seemed odd. I've pried the bands off several scrapped CV joints that I've taken apart without damaging the boot, but I've never tried to put one back on. A large zip-tie might work, but I expect you'll find the CV joint has been damaged, and you'll end up replacing the rear drive shaft.

Update:
So got the call from Nissan today. Messed up way more than I thought. They quoted us $2900 +tax for everything to be replaced and fixed. I am so pissed at myself
What were going to try to do is look online for cheaper parts (aftermarket vs OEM) in most cases aftermarket parts would be a little cheaper. Also were going to get someone else to fix it because the mechanic I go to would hook me up a little bit. Right now I'm just wondering what the best thing to do is..
- let Nissan do everything? (they would definitely do the job better IMO, but are charging up the a$$)
or
- look up aftermarket parts to replace them instead of oem Nissan parts?
Possibly going to file an insurance claim, but I'm not so sure.
Below is the picture of the write-up the service staff at Carolina Nissan gave me of all the parts, etc.
