That's a shame, but I'm not surprised at the amount of damage they found. You've already replaced some stuff in the rear, but I doubt you're completely out of the woods there either.
Cars today are built to sustain the loads normally imposed on them. Lowering the cost of materials, increased fuel economy, and controlled deformation during a crash are the modern design goals, and there's no payback for making them indestructible.
I've never had to deal with an insurance company for getting a car repaired (I'm only 65.), but I suspect it's going to be tough now that you've done some work on the car and waited so long to report it to them.

Update:
Okay so Nissan is dumb, they are trying to charge us for parts we don't need whatsoever. So before i had my wreck, my headers were rubbing my steering shaft a bit, yeah another story.. anyways, the only reason they thought the rack and shaft were bent, was because the headers are hitting the shaft.. no its not. that was already a problem before the wreck. anyways we got them to put the boot on then we told them we would get with them later on the other parts. we pull it over the pit, and see that the front left control arms are not even bent, just scraped up a little.. big deal? no. the only real problem we see is that the frame was pushed back about 1/4". so tomorrow or the next day we are taking it to a frame shop to get it adjusted.
also ran into another problem though... when my headers were hitting my steering shaft, we tried to fix it ourselves by taking a torch and trying to bend the steel. well didnt work to much and today we noticed 2 small holes in the header causing an exhaust leak. awesome right? so i guess were gonna have to find a way to get a spot weld on that.
so what Nissan said was $2900 in damages, is HOPEFULLY going to turn out to be just a $500 little problem.

well what would you recommend i do to my headers Mr DaveJackson??? (other than spend 7 hours taking them off, $500 getting new ones, and spending 7 more hours putting them on)

I still have stock manifolds on my car and can put down an easy 200WHP more then your car.

Oh trust me if I could I would. But I don't have $400 to spend on the labor. a spot weld will work for now dont ya think. and yes, i could be completely stock with just a turbo and pushing low boost 7 or 8psi and be 150-200hp over me. f/i is like a different car imo.

You could install them yourself you know....... I don't know about you but if I installed headers and they rubbed the steering rack I'd have those things off fast.

She's at the frame shop ATM. the frame was actually pushed back AND up about 1/4". So all thats left to do is order the rear driver side control arm, and then get the back wheels aligned and she'll be back up and running!

I am confused why would you not go with insurance. They would have totaled the car out and cut you a nice hefty check and then some. Even if your rates go up they will not go up enough compared to how much $$$$ you have poured into this project and will continue to pour. Good luck but it might have been a good idea just to go with insurance from day 1.
