Default 2006 350z overheating problems

2006 350z vq35de revup. I was driving recently, and saw the temp needle creep up. Once it got to the 3/4 range, I shut it off, and coasted to a stop. Limped it home, let it cool down, and checked the coolant. Took about 3 tablespoons to fill it up. Read some forum posts, and purchased the no spill funnel and did the bleed procedure many times. Hop back in, fire it up, and by the time I've made a mile, it's pegged. The fans are on. The top hose feels kinda hot, but not like it should when overheating. The bottom hose is not even barely warm. The radiator cap isn't hot either. Got me thinking that it could be the t stat. Took it out, boiled it, and it opened right up. Pulled it out and reboiled it a few times, and it opened every time. I don't know what could be causing it. Any help would be appreciated
