Polenta is made from corn meal.

Corn Meal mixed with water in the south is grits, in Italy it's called polenta

main difference is grits, you add lots of butter and cheese like cheddar.
Polenta you add more things like high end cheese, olive oil, even use broth rather then water.

Polenta cake is when you lay it out flat, let it firm up in the fridge, cut out pieces and pan fry it so the outside is cripsy.

Hmm, I can't imagine eating a cake made out of grits and enjoying it. I'd rather come over for a cooking class/demo than your KL-whatever the hell Kung-Fu manchu classes.

You have to get grits out of your head.

When I think of grits I think of a pile of white stuff that taste like pretty much nothing and has a weird oatmeal wannabe texture but smoother.

Grits if made right are super flavorful, chances are you wont find any place 500 miles from here that has good ones.

Polenta if done right is awesome. Very flavorful and when made into a cake has a nice crunch to it with a smooth center.

One day I'll make some for you.

Do you like corn muffins? Or corn bread? Cuz that's basically what it would taste like. With a different flare.
