I would never eat GP; only scumbags do that.

I can cook a few legit dishes that I grew up on. If my mother had left me her recipes which I asked of her for years I'd be cooking a lot more. Unfortunateky i may never get some back Any gringo fawks that every tried her food went nuts. I don't just say it was good food cuz it was my mother.

I'd be down to check out a Peruvian place but I don't fawk with chicken hearts or even dark meat. That $hit is for the birds. Give me breasts or GTFO.

They have basic chicken and pork tacos...

As to your question for the recipe, chances are you wont want to make it, white vinegar, cumin, oil, and lots of paprika is a pretty basic starting point.

The thing that makes it good is cooking it whole, and grilling it, it's one of the hardest things to grill. Whole chicken... You'll almost always burn the outside way way way before the inside is done. You can bake it in the oven but it wont even come close to being correct tasting.

If you pickup a grill with a rotisserie attachment, the job of cooking it gets 10 times easier.

Over all, it's a pretty damn difficult dish to make at home.

Ive been pulling the skin off my chickens, brining, and then basting with some butter etc. Keeps the outside nice with no flare ups etc and it cookes even through. I also lay it flat and run skewers through it. A little more prep but the chicken comes out beautiful even without the skin.

Question though, how is brining skinning and grilling not peruvian chicken... (as long as its seasoned with the traditional peruvian chicken spices)?

speaking of tacos, had some yesterday at Oyamel in DC ( Jose Andres joint). Pretty damn good and great happy hour prices. Even got adventurous and tried a "cricket" taco..stuffed with well crickets...salty but pretty good. Alberto approved.

Because its a whole different style of making it. It's like deep frying chicken without a batter or skin. It's still fried chicken but clay would kick you in the nuts for trying to pass it off as fried chicken.

Main thing is the flavor wont be there. A lot of it comes from the self baisting of the fat melting away and the seasonings get caked into the wonderful crispy skin.

You would have a Peruvian style chicken but it wouldnt be Peruvian chicken. Flavor was wont be close. I know because I do. Chicken breast sliced thin with the spice mix. It's not bad for grilled chicken but it isn't anything like Peruvian chicken.
